It’s winter right now but I still cannot do without salads. This warm kale salad with the added pumpkin seeds and feta, is hearty enough to be a meal on its own.
Kale is growing beautifully in the garden at the moment. It is actually very easy to grow and will give you fresh leaves over many months. Most varieties cope well with cold weather so it’s perfect to use in the winter months.
Of course, kale is packed with nutrition and is regarded as a superfood.
I used a combination of the curly kale and dino kale for this recipe. Any type of kale will do just be sure to remove the stems as they can be tough and stringy.
